For some reason anything in a mini form is immediately more appealing and delicious to me. That was the idea for these no bake energy bites, which also means that I can have more than one. Wahoo!

Ratings:

Tastiness: 9/10 (Needs some nuts, I think.)
Difficulty: Easy
Cost: 9/10 (10/10 if you use oats!)

You will need…

1 Cup Quinoa Flakes (or Oats)
2/3 Cup Coconut
1/2 Cup Flaxseed Meal
1/2 Cup Peanut Butter
1/2 Cup Chocolate Chips (Vegan Chocolate Chips if Vegan)
1/3 Cup Honey (Agave if Vegan)
2 T Chia Seeds
1 t Vanilla
1 Mashed Ripe Banana

For these, all of the ingredients just need to be mixed up in a bowl until well combined. You may need to add more peanut butter or honey to make it stick if it’s still dry.

Then put the mixture in the fridge to chill for about 30 Minutes.

Once it is ready, roll 2 Tablespoon size chunks into a ball. This recipe makes about 20 bites!
