This week I needed a fast lunch for school events, and I had just bought a bunch of peppers that were on sale. They were starting to get squishy, so I had to make them into something quickly! This salad was a result of that.

Difficulty: Very Easy

You will need…

1 Cup Uncooked Quinoa and 2 Cups Water
1 Can of Black Beans
1 Can of Corn
2 Tomatoes
2 Green Bell Peppers
1/4 Cup Diced Red Onion
3 T Dried Cilantro
Juice from 2 Limes
2 T Olive Oil

First, boil the quinoa and water until the water is absorbed and slice the peppers and onion. The tomatoes need to be seeded and diced as well!

Once the quinoa is done, add all of the ingredients and mix!

Sometimes I like to lay spinach leaves at the bottom and top them with the quinoa, which makes it last a little longer!
