Hello everyone! This week has been pretty wild for me, but I’m excited for this new recipe!

I recently found bags of quinoa on sale at Sprouts for only two dollars, and I need to use them up! The expiration date is approaching, but since it’s normally so expensive, I had to grab a few.

This is a recipe that has popped up in my feed a few times, and I decided to use it as my starting point! I liked it, but I ended up adding more pumpkin and vanilla for taste!

Difficulty: Easy
Cost: 8/10 (Quinoa is usually pretty expensive!)

For my version, you will need…

1/2 C Quinoa
1/2 C Almond/Coconut Milk (Or other milk of choice.)
1/2 C Water
1/2 C Pumpkin Puree
1 t Vanilla
1 t Pumpkin Pie Spice
2 T Maple Syrup

First, combine the milk, water, and quinoa in a pot and bring to a boil. Simmer until all the liquid is absorbed.


Then, add all ingredients and mix!



This recipe is great for breakfasts, and it will be very filling alone or with some nuts of your choice! You can also add milk and brown sugar to make it a dessert!
