This is another quick recipe that I tried out recently, and I had to tweak it a little to get it to come out right. If you follow the steps exactly, the zucchini will come out crispy and not soggy at all! I had some bad luck with the first couple batches.


Cost: 9/10 (Olive oil is a bit pricey!)

Difficulty: Easy

You will need…


First, preheat the oven to 350 degrees and line a baking sheet with parchment paper. Press the zucchini slices in between a couple towels to draw any excess moisture out and line the baking sheet with one layer of zucchini slices.

Mix the oil, salt, and pepper together, and spread over the top of the slices evenly.



Once the oven is warmed up, bake the slices for about 20-25 minutes. Move them around a little and flip them to the other side. Bake for 20-25 more minutes or until crispy and golden.

Remove from the oven, cool, and enjoy! Remember that the slices will shrink by a lot! I ended up eating the whole pan because they get so small. Feel free to double or even triple the recipe for a long lasting batch. 🙂
