After making my chickpeas, I wanted to come up with an entire meal with them. This recipe ended up being perfect. It is just a whole bunch of ingredients thrown together and a sauce that goes well with all of them! It is very easy to assemble, and it made about three lunches for me. I got the idea from an awesome blog, but modified it a little. Click here to see the original.

You will need…

1 Cup Uncooked Quinoa (Bring to a boil with 2 Cups water, and simmer until the water is absorbed.)
Mixed Greens
Roasted Chickpeas (Recipe is found here.)
Avocados
1 Red Bell Pepper
2 T Extra Virgin Olive Oil
Juice from 1 Lemon
1/2 t Salt
1/2 t Pepper
1 t Paprika
1/4 Cup Fresh Cilantro

For the sauce, just chop the red pepper after removing the seeds and stem. Then throw the pepper, oil, lemon juice, salt, pepper, paprika, and cilantro into a blender or food processor until smooth.

To make the bowls, place a handful of mixed greens at the bottom and dump the quinoa on top with the chickpeas and half of an avocado. After that, just top with the red pepper sauce, and enjoy! 🙂
